Carnitas toast

This recipe came after I made carnitas, which was a while ago. I woke up the next day really late. It was a “brunch time”. I wanted to go to St.Kildas, which is in Downtown Des Moines, but I couldn’t. So, I wanted to make my version of one of their toasts. They have an AMAZING mushroom toast and an awesome carnitas style sandwich at one point so, I wanted to recreate that. Here’s my take on a carnitas toast, perfect for a brunch or a quick dinner when you have carnitas leftover!

Ingredients:

  • 1 slice of bread (use whatever you normally have. I had a whole grain one)
  • 1/4 cup of cooked carnitas/pernil, my recipe can be found carnitas (here), pernil (here)
    Guacamole or hummus (optional)
    Chives/parsley for garnish (optional)
    Cheddar cheese
    2 eggs (for scrambled eggs)
    1 – 2 tablespoons of butter and a splash of oil.
    Salt and pepper (to taste)

How to make it

  • Throw the bread in the toaster. The thicker the bread the better.
  • In a medium size pan, add butter. Heat in medium to medium high heat.
    In a sheet pan add the cold 1/4 cup of carnitas and throw broil them for 5 minutes.
    Once the butter is melted, in a bowl add the two eggs and whisk. Add the eggs to the pan. Leave in the pan for 1 minute and lower the heat to medium -medium low. Stir the the eggs until light and fluffy. If you want them very silky, you may add more butter to your liking. At the end, season with salt and pepper
    Take the carnitas out of the broiler after the 5 minutes. If your broiler is SUPER hot, you can take them out if they crisp up quickly or keep them in for another minute if they need to.

Assemble it

  • Place the bread on a plate. You can add a small dot of hummus or guacamole if you wish. That would be the “glue”.

The “glue” can be guacamole, hummus of your choosing, or some cheddar cheese. I made two version, one with hummus, and another with cheddar cheese. It’ all a matter of choice!

  • After you add your glue, add the eggs. I added some more freshly ground pepper for taste. Place some cheddar cheese and parsley/chives on top!

The way you assemble it, is completely up to you. You can assemble it as you wish, the flavor profile do not change. I personally liked the crunch carnitas, soft egg/hummus and crunchy bread combo!
